Yes, we do. To achieve that iconic “melt-in-your-mouth” texture, we follow the authentic New York method of finishing our meat with steam. However, the secret to the flavor happens long before that:
The Cure: We begin with a specialized injection of our house-made marinade, allowing the meat to cure for a full week to develop deep seasoning.
The Smoke & Roast: The meat is first placed in our smokehouse to develop its signature crust (the “bark”) and then slow-roasted in a traditional oven to lock in the juices.
